Ingredients

  • 3–4 thin slices of fresh ginger (about 2 cm)
  • 1 cup of water
  • Optional: a few drops of lemon and 1 teaspoon of honey

Method

  1. Wash the ginger and slice it thinly, skin on.
  2. Put the slices and water in a small pot and bring to the boil.
  3. Turn the heat down and simmer gently for 10 minutes.
  4. Strain into a cup; once it has cooled a little, add lemon and honey if you like.

For a milder taste, grate the ginger instead and steep it in boiling water for 10 minutes rather than simmering it.
